Our herd of Scottish Highland cattle are 100% grass-fed, N0-GMO, NO-Hormones, raised with the principles of biodynamic farming. Beef is a rich source of essential nutrients, providing about 25 grams of protein, along with significant amounts of iron, zinc, and B vitamins in a typical 3-ounce serving. It also contains healthy fats, with less than 10 grams of total fat and less than 95 mg of cholesterol, making it a nutritious option when consumed in moderation.
Osso bucco, or ossobuco, is a traditional Italian dish from the Lombardy region made with cross-cut veal shanks that are braised with vegetables, white wine, and broth. The name translates to “bone with a hole,” referring to the marrow-filled bone at the center of the shank, which adds rich flavor to the dish.
