Rhubarb is renowned for its sour taste and thick stalks, which are usually cooked with sugar. Rhubarb is traditional known as a spring tonic. It is only available for a short period of time during the period of late April, May and early June.

Rhubarb is a good source of antioxidants, vitamin K, and fiber. It’s also rich in calcium oxalate, so if you’re prone to kidney stones, it might be best to avoid.

More importantly, the leaves are toxic and should never be eaten.
